OVOC Update: Preserving the Harvest.

Fall and Harvest are synonymous with each other here in Minnesota. Apples are ready to be baked into pies, or canned into apple sauce; garden vegetables are abundant and ready for processing.  As a reminder, many garden vegetables must be canned using a pressure cooker this includes, but is not limited to, all types of beans, carrots, potatoes, soups, all types of squash.

The University of Minnesota Extension has resources available online to assist with food preservation and food safety.  Visit the Food Safety home page to learn more.
